Hervir\u00e1 m\u00e1s deprisa, pero no subir\u00e1 de temperatura.<\/p>\n<p>Esta informaci\u00f3n, que la sabemos todos desde peque\u00f1os, se nos olvida delante del fuego. Casi mejor, porque tenerla presente siempre me ha convertido en un mani\u00e1tico. Mi chica me re\u00f1\u00eda cada vez que bajaba el fuego (por eso me dej\u00f3 creo yo). En cuanto entro en una cocina y veo el agua hirviendo a borbotones, bajo el fuego. No lo puedo resistir. A continuaci\u00f3n me toca explicar que no sirve de nada que el agua hierva mucho, con grandes burbujas, que los huevos no se pondr\u00e1n duros antes por mucho que hierva el agua, ni tampoco el arroz.<\/p>\n<p>Es posible que para cocinar algunos tipos de pasta sea necesario que el agua hierva con gran tumulto y tambi\u00e9n es posible que sea necesario para reducciones. Lo que yo propongo no incluye consumir menos gas para cocinar peor, sino consumir menos para cocinar igual de bien. Bajar el fuego cuando se pueda y dejarlo alto, que fluya la energ\u00eda, el calor y los borbotones cuando sea necesario.<\/p>\n<p>Ahora que llega el invierno, no se trata de pasar fr\u00edo en casa, pero tampoco de ir con manga corta, ni de abrir las ventanas porque no hay ser humano que resista con la calefacci\u00f3n central echando fuego.<\/p>\n<p>En definitiva, gastar menos y mejor.
